Begin by setting your oven to 350°F (175°C). Lightly coat an 8 x 4-inch loaf pan with cooking spray to prevent sticking.
In a medium-sized bowl, whisk together the flour, baking soda, and salt until well combined. Set this mixture aside for later use.
In a larger mixing bowl, use an electric mixer to cream together the butter and sugar until fluffy. Next, incorporate the egg whites, mashed bananas, applesauce, and vanilla extract, mixing on medium speed until the mixture becomes thick and creamy. Remember to scrape down the sides of the bowl to ensure everything is well blended.
Gradually add the flour mixture to the wet ingredients, mixing on low speed just until everything is combined. Be careful not to overmix the batter.
Gently fold in the blueberries, then transfer the batter into the prepared loaf pan. Place it in the center of the oven and bake for approximately 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, allow the loaf to cool in the pan for at least 20 minutes. Make sure the bread reaches room temperature before slicing into it.
