Ingredients

  • 1 1/2 cups fresh or frozen blueberries
  • 1 cup whole milk plain yogurt
  • 1 teaspoon agave syrup
  • 1 tablespoon water
  • 1/2 cup monk fruit sweetener

    In a medium-sized saucepan, mix together the blueberries, monk fruit or sugar, and water. Cook the mixture uncovered over medium-low heat. Allow it to simmer, stirring occasionally, until the berries begin to release their juices and soften slightly, which should take approximately 6 to 8 minutes.

    After cooling, transfer the mixture to a blender and blend until completely smooth. Then, strain it through a fine mesh sieve into a large bowl, discarding any solid pulp left behind.

    Incorporate the agave syrup and yogurt into the berry puree, then pour the combined mixture into an empty Ninja Creami pint.

    Secure the storage lid onto the pint and place it flat in the freezer (ensuring it’s not tilted) for a full 24 hours.

    Once the freezing time is up, take the pint out of the freezer and carefully remove the lid.

    Set up the bowl in the machine according to the instructions in the manual and select the LITE ICE CREAM setting.

    When the processing is finished, open the machine; if the texture appears crumbly, return it to the machine and press the re-spin button for additional processing.
