Ingredients

  • 4 oz pancetta
  • 1/2 cup carrots
  • 1 lb 95% lean ground beef
  • 1/4 cup white wine
  • 2 – 28 oz cans crushed tomatoes
  • 1 bay leaf
  • salt and fresh pepper
  • 1/4 cup chopped fresh parsley
  • 1/2 cup half & half
  • 1 small onion
  • 1/2 cup celery
  • 1 tbsp butter

Instructions

    In a sturdy deep sauté pan, render the pancetta until its fat has fully liquefied.

    Incorporate the butter along with the onions, celery, and carrots; cook over medium-low heat until they become tender, which should take around 5 minutes.

    Raise the heat to medium-high, introduce the meat, and season it with salt and pepper. Sauté until it develops a nice brown color.

    Pour in the wine and allow it to reduce, cooking for approximately 3 to 4 minutes.

    Stir in the tomatoes and bay leaf. Cover and let it simmer on low heat for a minimum of 1-1/2 to 2 hours, stirring occasionally to ensure even cooking.
