In a blender, combine the watermelon, lime juice, rum, and sugar, then blend until the mixture is completely smooth. Transfer the resulting puree into a 9 x 9 metal baking dish.
Place the baking dish in the freezer for roughly 1 1/2 hours. After this time, take a fork and thoroughly scrape the mixture to incorporate all the ingredients well.
Put the dish back into the freezer and allow it to freeze until it is nearly solid, which should take about 1 to 2 hours. Use the fork to scrape the granita, creating fluffy, snow-like ice crystals.
Continue to freeze the mixture, scraping occasionally, until it is fully frozen and has a light, shaved texture.
Serve the granita in martini glasses, garnished with wedges of watermelon and fresh mint leaves.
Keep the granita covered with plastic wrap in the freezer until it’s time to serve.
