Begin by preheating your oven to 425°F. Lightly coat a spacious nonstick baking sheet with cooking spray.
Generously sprinkle 1/2 teaspoon of kosher salt on both sides of the pork chops.
In a large shallow bowl, mix together panko breadcrumbs, crushed cornflakes, grated parmesan cheese, 3/4 teaspoon of kosher salt, paprika, garlic powder, onion powder, chili powder, and black pepper until well combined.
In a separate bowl, whisk the eggs until beaten. Take each pork chop, dip it into the egg, and then coat it in the breadcrumb mixture.
Arrange the coated pork chops on the prepared baking sheet and continue the process with the remaining chops.
Lightly mist the tops of the pork chops with additional oil and place them in the oven to bake for 20 minutes.
