  • olive oil spray
  • 24 large eggs
  • 2 cups 2% milk
  • 1/2 cup heavy cream
  • 12 ounces Feta cheese
  • 3 scallions
  • 3 plum tomatoes
  • 2 1/2 teaspoons kosher salt
  • black pepper
  • 3 shallots
  • 6 ounce bag baby spinach
  • 1 teaspoon olive oil

Instructions

    Begin by setting your oven temperature to 350°F (175°C). Lightly coat a 9 x 13 x 3-inch Pyrex Deep baking dish with cooking spray or oil.

    Place a large skillet on the stove over medium heat. Add the oil along with the shallots, sautéing them until they become tender, which should take around 6 to 8 minutes.

    Incorporate the spinach into the skillet and continue cooking until it is fully wilted. Once done, take the skillet off the heat.

    In a spacious mixing bowl, vigorously beat together the eggs, milk, heavy cream, Feta cheese, scallions, tomatoes, salt, and black pepper until well combined.

    Fold in the sautéed spinach and shallots, then transfer this mixture into the previously prepared baking dish.
