Ingredients

  • 1 cup (5 oz) all purpose or white whole wheat flour*
  • 1 cup non-fat Greek yogurt
  • handful baby spinach
  • 2 ounces (1/2 cup) shredded mozzarella cheese
  • 8 cherry tomatoes
  • 4 large eggs
  • 2 strips cooked center cut bacon
  • 1/2 teaspoon kosher salt
  • 1 1/2 teaspoons baking powder

Instructions

  1. 1

Begin by setting your oven temperature to 450°F. Prepare a large baking sheet by either laying down a silicone liner or lightly coating it with oil if you're opting for parchment paper.

  2. 2

In a medium-sized mixing bowl, combine the flour, baking powder, and salt, whisking them together thoroughly.

  3. 3

Incorporate the yogurt into the dry ingredients, using a fork or spatula to mix until you achieve a crumbly texture.

  4. 4

Lightly sprinkle flour onto your work surface, then transfer the dough from the bowl. Knead the mixture gently several times until it becomes tacky but not overly sticky, approximately 20 turns (it should not leave any residue on your hands when pulled away).

  5. 5

Portion the dough into four equal pieces, each weighing around 3-3/8 ounces.

  6. 6

Dust your work surface and rolling pin with a bit of flour, then roll each piece of dough into thin ovals measuring 7 to 8 inches in diameter. Arrange these on your prepared baking sheet.

  7. 7

Layer the dough with spinach, mozzarella cheese, and tomatoes, ensuring to leave a space in the center for the egg. Carefully crack an egg into the center of each dough and top it off with bacon.

  8. 8

Place the baking sheet in the oven and bake for 10 to 12 minutes, or until the crust turns golden brown and the egg is fully cooked. Add salt and pepper to taste before serving.
