Ingredients

  • 1.25 ounces cooked chicken breakfast sausage
  • 2 tablespoons chopped scallions
  • pinch kosher salt
  • 1 ounce part-skim shredded cheddar
  • 7- inch low carb tortillas
  • black pepper
  • salsa and guacamole
  • 1 large egg
  • 3 tablespoons part-skim cottage cheese
  • 2 tablespoons egg whites*

Instructions

    In a small non-stick skillet, place the sausage and cook it over medium heat until it turns a nice brown color and the edges become crispy. Once cooked, transfer the sausage to a plate and set it aside.

    While the sausage is browning, crack the eggs into a mixing bowl and season them with salt and freshly ground black pepper to your preference. Incorporate the cottage cheese and chopped scallions, then whisk the mixture until well combined.

    Lightly coat the same skillet with cooking spray, then pour in the egg mixture. Cook over medium heat, gently folding the eggs as they begin to set, until all the moisture has evaporated, which should take about 2 to 3 minutes. Remove the skillet from the heat.

    Take a clean large skillet or griddle and preheat it over medium-low heat, then apply a light spray of oil before placing a tortilla in the pan.

    On the lower half of the tortilla, scatter half of the cheese evenly. Layer the cooked eggs and sausage on top, followed by the remaining cheese. Cook until the bottom of the tortilla is golden brown and crispy, approximately 2 to 3 minutes. Carefully fold the tortilla in half and flip it over, cooking until the cheese inside has melted.

    Cut the quesadilla into three equal sections and serve immediately.
