Ingredients

  • 1 teaspoon olive oil
  • 1 pound 93% lean ground turkey
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh sage
  • 1 teaspoon sweet paprika
  • pinch nutmeg
  • 1/8 teaspoon cayenne pepper
  • olive oil spray
  • 3/4 teaspoon kosher salt
  • pinch sugar
  • 1 1/2 teaspoon fennel seeds
  • 1 small onion
  • 1 large garlic clove

Instructions

    Begin by warming a medium nonstick frying pan over medium-low heat. Add the oil, diced onions, a pinch of salt (1/8 teaspoon), and minced garlic. Stir the mixture frequently for about 4 to 5 minutes, or until the onions become translucent. Lower the heat as necessary to prevent them from browning too rapidly.

    Once the onions have softened, incorporate the fennel and stir quickly until its aroma is released and it becomes lightly toasted, which should take around 1 minute. Transfer this mixture to a medium bowl to allow it to cool slightly.

    In a large mixing bowl, combine the ground turkey or your preferred ground meat with red wine vinegar, thyme, sage, the remaining salt, paprika, sugar, and nutmeg. Add the cooled onion, garlic, and fennel mixture, then blend everything together with a fork until all components are evenly mixed.

    Shape the mixture into 8 uniform patties and place them on a sheet of parchment or wax paper as you work. If you wish to prepare these for a later occasion, they can be stored in the refrigerator or frozen.

    Lightly coat a nonstick skillet with oil and place it over medium-low heat. Once the skillet is hot, cook the turkey patties in two separate batches, browning them for 3 minutes on each side.

    After achieving a golden-brown crust on both sides, lower the heat to low and cover the skillet. Continue cooking until the internal temperature of the patties reaches 165°F.

    Remove the skillet from heat and repeat the cooking process with the second batch of patties.
