Ingredients

  • 2 cups finely chopped broccoli floret
  • 3/4 cup whole wheat or gluten-free seasoned breadcrumbs
  • 4 slices cheddar cheese
  • 3/4 teaspoon kosher salt
  • olive oil spray

  • 1 large egg
  • 2 teaspoons water
  • 8 thin chicken breast cutlets

Instructions

    Begin by heating your oven to 425°F. Lightly coat a baking sheet with cooking spray.

    In a microwave-safe bowl, place the broccoli along with 1 tablespoon of water. Cover it and microwave for 1 minute or until tender. Drain any excess water and sprinkle with 1/4 teaspoon of salt.

    In a small mixing bowl, whisk together an egg, a splash of water, and a pinch of salt; set this mixture aside. In another bowl, pour in the breadcrumbs.

    If your chicken breasts are thicker than 1/4 inch, use a mallet and wax paper to pound them to the desired thickness. Season both sides of the chicken with 1/2 teaspoon of salt. Lay a half slice of cheese in the center of each chicken breast, followed by 2 tablespoons of the prepared broccoli.

    Carefully roll the chicken around the filling to encase the cheese completely, securing the ends with toothpicks if necessary.

    Dip the rolled chicken into the egg mixture, then coat it with breadcrumbs before placing it on the prepared baking sheet. Lightly spray both sides with cooking oil and bake for approximately 25 minutes, or until the chicken is fully cooked. Remove the toothpicks before serving.

    For the air fryer method, first preheat the appliance to 400°F. Prepare a sheet pan by spraying it with oil.
