Ingredients

  • 20 ounces broccoli florets or 2 packages
  • 1 ½ cups grated part-skim sharp cheddar cheese
  • Homemade cream of mushroom soup substitute
  • 2 large eggs
  • 22 crushed buttery crackers
  • 1 tablespoon olive oil
  • 1 cup finely chopped mushrooms
  • 1 clove garlic
  • 3 tablespoons all-purpose flour
  • 1 cup low-sodium broth
  • 1 cup fat free milk
  • 1 large chicken bouillon such as Knorr
  • thawed and drained
  • ¼ cup mayonnaise
  • cup light sour cream

Instructions

  1. 1

Preheat the Oven: Begin by heating your oven to 350°F. Lightly coat a 13×9-inch baking dish with vegetable oil spray for easy cleanup.

  2. 2

Steam the Broccoli: Cook the broccoli until it's tender yet still crisp. You can do this by microwaving it for 2 minutes or by steaming it on the stovetop with 3 tablespoons of water for about 3 to 4 minutes.

  3. 3

Make the Homemade Cream of Mushroom Soup: In a saucepan over medium heat, warm some oil and sauté the mushrooms along with the garlic until they become tender. Incorporate the flour and cook for 1-2 minutes while stirring continuously. Gradually whisk in the broth, bouillon, and milk, stirring until the mixture is smooth and thick, which should take around 3 to 4 minutes. Once thickened, mix in the sour cream and set it aside to cool.

  4. 4

Combine Ingredients: In a large mixing bowl, blend the cooked broccoli with mayonnaise, cheddar cheese, the homemade soup, and the beaten eggs. Stir until everything is evenly mixed.

  5. 5

Prepare the Casserole: Transfer the broccoli mixture into the greased baking dish, ensuring it is spread out evenly.

  6. 6

Top with Crackers: Evenly distribute 1 cup of crushed buttery crackers over the top of the casserole. Lightly mist with oil to help with browning.

  7. 7

Bake the Casserole: Place the dish in the preheated oven and bake for about 25 to 35 minutes, or until the casserole is firm and the cracker topping has turned a lovely golden brown.
