Broccoli Rabe and Sausage Parsnip Pasta

If the slight bitterness of broccoli rabe isn't to your taste, you can easily substitute it with broccolini or regular broccoli for a milder flavor in this dish.

Ingredients

  • 1 bunch broccoli rabe
  • 2 links spicy Chicken Italian Sausage
  • 1/4 tsp crushed red pepper flakes
  • kosher salt and black pepper
  • 1/2 cup low sodium chicken broth
  • 1/2 cup grated parmesan cheese
  • 2 parsnips
  • 2 cloves garlic
  • 1/2 tsp dried oregano

Instructions

    Cut the broccoli rabe into pieces approximately 1 inch in size and set it aside for later use.

    Heat a large skillet over medium heat. Once it’s warmed, introduce the sausage along with the oregano, cooking for 6 to 8 minutes while breaking it apart with a wooden spoon until it becomes nicely browned. Once done, transfer the sausage to a plate.

    In the same skillet, add the broccoli rabe and parsnip noodles, along with the garlic and red pepper flakes. Pour in the broth and cook the mixture until the noodles reach an al dente texture, which should take around 5 minutes.

    Return the cooked sausage to the skillet, sprinkle in the cheese, and mix everything together until well combined.
