Ingredients

  • 1 tablespoon olive oil
  • 1 lb 93% lean ground turkey
  • 3 tbsp freshly grated Pecorino Romano Cheese
  • 1 garlic clove
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh black pepper
  • 1/4 teaspoon red pepper flakes
  • 4 slices large tomato
  • 4 large lettuce leaves
  • 3 cloves garlic

    Finely chop approximately 3/4 cup of the leaves and flowers from the broccoli rabe, then set this mixture aside for the burger patties.

    Take the remaining broccoli rabe and slice it into 2-inch segments.

    In a large pot, bring salted water to a vigorous boil, then introduce the broccoli rabe into the pot.

    Blanch the broccoli rabe for around 1-1/2 to 2 minutes, then drain thoroughly and place it in a colander to allow excess water to escape.

    In a medium-sized bowl, mix together the ground turkey, the 3/4 cup of finely chopped broccoli rabe, Romano cheese, minced garlic, salt, and pepper (including red pepper flakes if you choose to add them).

    Shape the mixture into four burger patties and refrigerate them until you are ready to cook.

    Preheat a large, deep sauté pan over medium-high heat. Once hot, pour in the olive oil and add the garlic, cooking until fragrant and golden, about 1 minute, ensuring it doesn’t burn.

    Incorporate the blanched broccoli rabe into the pan, tossing it with the garlic and oil. Season with 1/4 teaspoon of salt and crushed red pepper; cook for 2 to 3 minutes, or until warmed through.

    While the broccoli rabe is heating, cook the turkey burgers in a hot skillet over medium-high heat for approximately 6 to 7 minutes on each side, or until they are fully cooked in the center.
