Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 shallots
  • 1/4 cup white wine
  • 2 garlic cloves
  • kosher salt and fresh black pepper
  • 4 fish fillets
  • 2 tbsp capers
  • 2 tomatoes

Instructions

  1. 1

Begin by setting your broiler to low and adjusting the rack so it sits 6 inches away from the heat source.

  2. 2

Arrange the fish on a baking sheet, then drizzle with 1 tablespoon of olive oil and season generously with salt and freshly cracked black pepper.

  3. 3

In a medium-sized skillet, warm the remaining olive oil over medium-low heat. Add the minced garlic and shallots, cooking gently for about 4 to 5 minutes until softened. Stir in the tomatoes and season with salt and pepper to your liking.

  4. 4

Pour in the wine and continue to sauté until the liquid has reduced, which should take around 5 minutes. Toss in the capers and cook for an additional minute.

  5. 5

While the sauce is simmering, place the fish under the broiler and cook until it is fully done, which should take about 6 to 8 minutes, depending on how thick the fillets are.

  6. 6

Once the fish is ready, transfer it to a serving dish and generously spoon the tomato caper sauce over the top.
