Begin by placing the chicken into the slow cooker, ensuring it is fully submerged in water or chicken broth. Set the cooker to high and let it work its magic for 4 hours. Once done, take the chicken out and shred it using two forks, discarding any remaining liquid.
If you prefer using an Instant Pot, add at least 1 cup of broth or water to cover the chicken. Seal the lid and cook on high pressure for 15 minutes, then allow for a natural release. Afterward, drain the liquid and shred the chicken with two forks.
In the meantime, blend the cream cheese and hot sauce in a bowl until you achieve a smooth consistency. Incorporate the shredded chicken, blue cheese, grated carrots, and chopped scallions, stirring until everything is well combined. This will yield approximately 3 cups of filling.
Take an egg roll wrapper and lay it flat on a clean work surface, positioning it so that it resembles a diamond shape with points facing up and down.
Spoon approximately 3 tablespoons of the buffalo dip mixture onto the lower third of the wrapper.
Moisten your finger in a small bowl of water and trace it along the edges of the wrapper. Then, lift the bottom point closest to you and wrap it around the filling.
Fold the left and right corners inward toward the center, and continue rolling to form a tight cylinder.
Place the completed egg roll aside and repeat the process with the remaining wrappers and filling.
Lightly spray all sides of the egg rolls with oil, using your fingers to ensure an even coating.
Preheat your oven to 400°F. Prepare a baking sheet by spraying it with oil.
Arrange the egg rolls on the prepared baking sheet and bake until they are golden brown and crispy, which should take about 16 to 18 minutes. Don’t forget to turn them halfway through the cooking time.
Serve the egg rolls hot, accompanied by a dipping sauce on the side, if you wish.
For those who prefer frying, heat oil to 370°F and cook the egg rolls in batches for 8 to 9 minutes, turning them halfway through until they achieve a golden brown color.
Enjoy the egg rolls immediately, with dipping sauce on the side, if desired.
