Ingredients

  • oil spray
  • 2 scallions
  • 1/3 cup finely minced celery
  • 1/3 cup finely minced carrot
  • 1 clove crushed garlic
  • kosher salt and freshly ground black pepper
  • 1/3 cup Franks Hot sauce
  • 1/4 cup skinny blue cheese dressing
  • finely chopped celery leaf for garnish
  • 1/4 cup panko crumbs
  • 1 large egg
  • 1 1/4 lb ground chicken

Instructions

  1. 1

Begin by preheating your oven to 400°F (200°C).

  2. 2

Lightly coat a non-stick baking sheet with a spritz of cooking oil.

  3. 3

In a sizable mixing bowl, combine the ground chicken, panko breadcrumbs, egg, chopped scallions, diced celery, grated carrot, and minced garlic; season generously with salt and pepper according to your preference.

  4. 4

With clean hands, mix the ingredients thoroughly until well integrated. Shape the mixture into 26 meatballs, each about 1/8 cup in size.

  5. 5

Arrange the meatballs on the prepared baking sheet and bake them in the oven until they are fully cooked and have turned a lovely golden brown, approximately 16 to 18 minutes.

  6. 6

Once baked, transfer the meatballs to a bowl, pour in the buffalo sauce, and gently toss them to ensure they are evenly coated.

  7. 7

Serve the meatballs right away, optionally drizzled with blue cheese dressing for added flavor.
