Ingredients

  • 2 ounces Pecorino Romano cheese
  • 1 ounce Parmesan cheese
  • 1/2 teaspoon freshly ground black pepper

Instructions

    Adjust your oven racks so one is positioned in the upper third and the other in the lower third, then preheat the oven to 400°F. Prepare two baking sheets by lining them with aluminum foil or silicone baking mats.

    In a small mixing bowl, combine the Pecorino, Parmesan, and freshly cracked pepper, stirring until the ingredients are thoroughly mixed.

    Take approximately 1 generous tablespoon of the cheese blend and place it onto one of the prepared baking sheets. Use your fingers to gently press it into a compact mound.

    Continue this process with the remaining cheese, forming 6 mounds on each sheet while ensuring there’s at least a 2-inch gap between each one. Finish each mound with a sprinkle of freshly cracked pepper from a grinder.

    Bake the cheese crisps for around 10 minutes, rotating the baking sheets halfway through, until they achieve a golden color and the bubbling on their surfaces has significantly reduced (indicating that the moisture has evaporated).

    Allow the crisps to cool completely, and if desired, you can dab them with a paper towel before serving.
