Begin by steaming just over 2 cups of raw cauliflower florets in a small amount of water, covered, for approximately 4 to 5 minutes or until they become tender yet still firm. Once cooked, drain thoroughly and pat dry using a paper towel. Finely chop the florets with a knife and set aside 2 cups for the recipe.
Preheat your oven to 400°F (200°C). Lightly coat a nonstick baking sheet with cooking spray.
In a medium-sized mixing bowl, combine all the ingredients and add salt and pepper according to your taste preferences.
Take about 1 tablespoon of the mixture in your hands and shape it into small oval forms. Arrange these on the prepared baking sheet and bake for 16 to 18 minutes, flipping them halfway through the cooking time until they turn a lovely golden brown.
