Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1/4 cup cold salted whipped butter
  • 1 cup 0% fat Greek Yogurt
  • 4 cloves minced or grated garlic
  • 2 ounces shredded part-skim cheddar cheese
  • olive oil spray
  • 2 tablespoons finely chopped parsley

Instructions

    Begin by setting your oven to 375°F. Prepare a baking sheet by lining it with a silicone mat for optimal results, and position the oven rack in the upper third of the oven.

    In a mixing bowl, whisk together all the dry ingredients using a fork. Incorporate 2 tablespoons of butter into the mixture with a pastry cutter, or alternatively, use two forks if a pastry cutter isn't available, until the butter is no longer discernible.

    Introduce the yogurt, cheddar cheese, and half of the minced garlic into the bowl, and mix everything together with a fork until just combined.

    Next, with your hands, knead the dough approximately 20 times until it comes together and develops a smooth, slightly tacky texture.* Shape the dough into a flat disc and slice it into 8 equal portions. Roll each piece into a ball, then flatten them to about ½ inch thick and arrange them on the prepared baking sheet.

    Lightly spray the tops of the biscuits with cooking oil and place them in the oven on the top rack. Bake for 20 to 24 minutes, or until they turn a lovely golden brown. There's no need to flip them during baking. Once baked, allow them to rest for 10 minutes.

    In the meantime, melt the remaining butter in a small skillet over low heat. Add the rest of the minced garlic and sauté for about 1 minute until it becomes fragrant. When the biscuits are finished baking, brush them generously with the melted garlic butter and sprinkle with parsley.

Notes & Tips

  • *The dough will seem dry at first but if you keep kneading it, it will hold together into a large ball and should become a little tacky, that’s when you know you kneaded it enough.
  • You can halve, double or triple the recipe as needed.
