  • 3/4 cup Italian seasoned breadcrumbs
  • 1/3 cup ketchup
  • 2 large eggs
  • 1 1/4 teaspoon kosher salt
  • 1 teaspoon dried marjoram
  • 1 cup 4 ounces reduced fat shredded Cheddar cheese
  • 1 oz chopped fresh baby spinach
  • 2 tablespoons ketchup
  • 1 teaspoon brown sugar
  • 1- 1/2 teaspoons dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 large shallot
  • 2 pounds 93% lean ground turkey
  • 2/3 cup chopped fresh cremini mushrooms

    Begin by heating your oven to 350 degrees Fahrenheit. Lightly spray a 9- x 13-inch baking dish with a cooking spray to prevent sticking.

    In a small nonstick skillet, apply a layer of olive oil spray and place it over medium heat. Sauté the shallot until it turns a lovely golden hue, which should take around 2 to 3 minutes. Once done, take it off the heat.

    In a separate small bowl, mix together the ingredients for the glaze until well combined.

    In a spacious mixing bowl, blend together the ground turkey, mushrooms, sautéed shallot, breadcrumbs, ketchup, egg, salt, and marjoram. Use your hands to thoroughly combine the mixture. Transfer this mixture onto a piece of parchment paper measuring 12 x 16 inches and shape it into a rectangle measuring approximately 10 x 12 inches, pressing down firmly.

    Evenly distribute the cheese mixture over the turkey blend, then layer the spinach on top. Starting from one of the short edges, roll the mixture up like a jelly roll, gently lifting the parchment paper and peeling it away as you go. Ensure the ends are tightly sealed. Position the roll seam-side down in the prepared baking dish.

    Bake in the oven for 45 minutes. After this time, take it out and brush the glaze over the top of the roll. Return it to the oven for an additional 10 to 15 minutes, or until there is no pink visible in the meat. Once finished, remove it from the oven and let it rest for 10 minutes. Finally, cut into 16 slices and serve.
