Ingredients

  • 2 cups 6 oz uncooked rotini pasta (use brown rice pasta for GF)
  • 1 garlic clove
  • 1 lb lean ground beef
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste
  • 28 oz diced tomatoes
  • 2 tbsp Dijon Mustard
  • 2 cups reduced-fat grated cheddar cheese
  • 1/4 cup chopped dill pickles
  • 2 tsp olive oil
  • 1 1/2 cups onions

    Begin by setting your oven to 350 degrees Fahrenheit. Lightly coat a 9 x 13 inch baking dish with non-stick cooking spray.

    Bring a large pot of salted water to a rolling boil, then add the pasta and cook according to the package instructions until it reaches an al dente texture. Drain thoroughly.

    In the meantime, heat oil in a spacious skillet over medium-low heat. Add the diced onions and sauté until they become tender, approximately 5 minutes. Incorporate the minced garlic and continue to cook for an additional 30 seconds.

    Add the ground beef to the skillet and cook until it turns brown, seasoning with salt and pepper to taste.

    Mix in the tomato paste, followed by the diced tomatoes and mustard. Allow the mixture to simmer gently until it thickens slightly, which should take around 2 minutes.

    Combine the meat mixture with the cooked pasta, then transfer it into the greased baking dish.
