Ingredients

  • 1 pound 93% lean ground beef
  • 4 dill pickle spears
  • 1/2 small red onion
  • 4 ounce avocado
  • 1 cup cherry tomatoes
  • 1/4 cup reduced-fat shredded cheddar cheese
  • 1/4 cup light mayonnaise
  • 1 teaspoon mustard
  • 1 teaspoon dill pickle juice
  • 4 teaspoons ketchup
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Freshly ground black pepper
  • 4 cups chopped romaine lettuce
  • ¼ teaspoon kosher salt

Instructions

    In a spacious mixing bowl, blend the ground beef with salt and pepper. Using damp hands, carefully shape the mixture into 4 equal-sized patties. Set them aside for now.

    In a separate large bowl, thoroughly whisk together all the ingredients for the dressing. Put this aside as well.

    Grill the hamburger patties until they reach a medium level of doneness, about 4-5 minutes on each side. When you flip the patties, add the onion rings to the grill. Let the onions cook for the remaining 4-5 minutes, turning them halfway through for even cooking. Once done, allow the patties to rest for 5-10 minutes before cutting each into 16 small bite-sized pieces.

    In the bowl, mix in the lettuce, pickles, onion, avocado, and tomato. Distribute the salad mixture onto 4 plates, topping each with the grilled onions, cheese, and one chopped patty. Finish by drizzling each plate with one-quarter of the dressing.
