Ingredients

  • 2 tablespoons skim milk
  • 1/3 cup seasoned breadcrumbs
  • 1 tablespoon tomato paste
  • 1/4 cup chopped parsley
  • 1/4 teaspoon kosher salt
  • 1 1/2 pounds 93% ground turkey
  • cooking spray
  • 2 cloves garlic
  • 28 ounce can crushed tomatoes
  • kosher salt and black pepper
  • 1 1/2 cups shredded part-skim mozzarella cheese
  • parsley or basil for garnish
  • 1 large egg
  • 1/3 cup grated Pecorino Romano cheese
  • 2 small cloves crushed garlic

Instructions

  1. 1

In a spacious mixing bowl, blend together the milk, breadcrumbs, Pecorino cheese, minced garlic, egg, tomato paste, chopped parsley, and salt until thoroughly combined.

  2. 2

Incorporate the ground turkey into the mixture, using a fork to gently combine all ingredients without overmixing, then shape the mixture into 18 meatballs.

  3. 3

Place a large nonstick skillet over medium heat. Once hot, lightly coat it with cooking spray and sear the meatballs for approximately 5 to 6 minutes on each side until browned. Transfer them to a plate and set aside.

  4. 4

Lower the heat to medium-low, then add oil and minced garlic to the skillet, sautéing until the garlic turns golden brown, which should take about 1 to 2 minutes.

  5. 5

Stir in the tomatoes along with salt and pepper to taste, then reintroduce the meatballs to the skillet. Cover partially and let simmer over medium-low heat until the meatballs are fully cooked, roughly 5 minutes.

  6. 6

Remove the cover, sprinkle mozzarella cheese on top of the meatballs, cover again, and cook until the cheese is melted, about 2 minutes. If your skillet lacks a lid, you can place it under the broiler for 2 to 3 minutes until the cheese is bubbly and melted.
