In a spacious mixing bowl, blend together the milk, breadcrumbs, Pecorino cheese, minced garlic, egg, tomato paste, chopped parsley, and salt until thoroughly combined.
Incorporate the ground turkey into the mixture, using a fork to gently combine all ingredients without overmixing, then shape the mixture into 18 meatballs.
Place a large nonstick skillet over medium heat. Once hot, lightly coat it with cooking spray and sear the meatballs for approximately 5 to 6 minutes on each side until browned. Transfer them to a plate and set aside.
Lower the heat to medium-low, then add oil and minced garlic to the skillet, sautéing until the garlic turns golden brown, which should take about 1 to 2 minutes.
