Begin by removing the stems from the cherries and pitting them. For an efficient method, refer to the cherry pitter I suggest above.
In a medium-sized saucepan set over medium heat, mix the cherries with water, sugar, and lime juice. Allow the mixture to cook until the cherries become tender and fully softened, which should take approximately 10 to 15 minutes.
Once cooked, take the saucepan off the heat and allow the mixture to cool down to room temperature.
Blend the softened cherries along with their liquid until smooth, then strain the puree through a fine mesh sieve to remove any solids.
Transfer the strained mixture into ice pop molds and place them in the freezer for a minimum of 2 hours to set.
