In a sizable measuring jug or bowl, combine the soy sauce, chicken stock, cornstarch, mirin, sugar, sesame oil, and white pepper. Whisk the mixture thoroughly until all ingredients are completely blended and dissolved.
Heat a large skillet over medium-high heat and pour in one teaspoon of canola oil. Cook half of the chicken pieces until they are fully cooked through, approximately 2-3 minutes per side.
With the remaining chicken, add another teaspoon of oil and repeat the cooking process.
Once cooked, transfer the chicken to a plate and set aside.
In the same skillet, add the leftover oil, along with the minced garlic and ginger. Sauté for 30-45 seconds until aromatic, taking care not to let them brown.
Mix the garlic and ginger well, then pour in the sauce, whisking to ensure it is well combined.
Introduce the broccoli to the skillet and allow the sauce to simmer for 2-3 minutes until it reaches a thicker consistency.
Return the cooked chicken to the skillet and stir thoroughly to ensure it is evenly coated in the sauce.
If you wish, sprinkle sesame seeds on top for garnish before serving.
