Begin by preheating your oven to a temperature of 200°F.
Generously season the chicken pieces with salt and pepper, then lightly coat them in flour.
In a large skillet, warm it over medium heat; once heated, add 1 teaspoon of butter and 1 teaspoon of olive oil.
Place the chicken in the skillet and cook for approximately 5 minutes on each side, or until the chicken is cooked through and no longer pink in the center.
Once cooked, transfer the chicken to the oven to keep warm.
In the same skillet, add more olive oil and butter, followed by the minced garlic. Sauté for a few seconds; then incorporate the mushrooms along with salt and pepper, stirring occasionally until they turn golden brown, which should take around 5 minutes.
Pour in the white wine and chicken broth, adding fresh parsley; use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Continue to cook for a few more minutes, or until the liquid has reduced by half.
