In a medium saucepan, combine mirin, low sodium soy sauce, honey, and minced garlic. Bring this mixture to a boil, then reduce the heat to medium and let it simmer for approximately 5 minutes. Remove from heat and allow it to cool.
Dice the chicken into 1-inch cubes and transfer them into a ziplock bag; pour half of the cooled marinade over the chicken pieces.
In a separate large ziplock bag, add the zucchini and pour the remaining marinade over it.
Let both bags marinate in the refrigerator for a minimum of 30 minutes.
In the meantime, immerse the skewers in water for 30 minutes to prevent them from burning during grilling.
Assemble the chicken onto the skewers, alternating with pieces of green onion, ensuring each skewer contains 3 chunks of chicken and 2 segments of green onion. Discard the marinade used for the chicken.
Assemble the zucchini onto the skewers, alternating with the leftover green onion, and set aside the marinade for later use.
Preheat your grill or grill pan to a medium-high temperature.
Once heated, apply a light spray of oil, then lower the heat to medium; grill the chicken and zucchini skewers for about 5 to 6 minutes on each side, brushing both sides with the yakitori sauce during the final minutes of cooking.
