Ingredients

  • 16 oz boneless skinless chicken breasts
  • 1 red bell pepper
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • pinch ancho or Mexican chili powder
  • salt and pepper to taste
  • 2 tsp olive oil
  • 8 reduced-carb whole wheat flour tortillas
  • 1/2 cup reduced fat shredded Mexican cheese
  • reduced fat sour cream
  • guacamole
  • 1 medium onion
  • 3 tbsp lime juice
  • 1 green or poblano pepper

Instructions

    In a bowl, combine the chicken with lime juice, then season it generously with chili powder, salt, black pepper, garlic powder, and cumin.

    Prepare the vegetables by seasoning them with salt and pepper, then drizzle with olive oil and toss to coat evenly.

    For grilling the onions and peppers outdoors, place them in a cast iron skillet, cover, and grill over medium heat until they become tender, which should take around 15 minutes. Alternatively, if you're cooking indoors, a large skillet on the stovetop over medium heat will work well; cover and sauté for 16 to 18 minutes until the onions and peppers are soft.

    Preheat your outdoor grill or an indoor grill pan to medium heat. Grill the chicken for approximately 8 minutes on each side, or until it is thoroughly cooked.

    Once the chicken is done, move it to a cutting board and slice it into strips. Mix the sliced chicken with the grilled peppers and onions.
