In a sizable mixing bowl, blend together yogurt, minced garlic, lemon juice, salt, cumin, onion powder, paprika, turmeric, black pepper, cinnamon, and red pepper flakes. Introduce the chicken pieces and ensure they are thoroughly coated in the marinade. Allow the chicken to marinate for at least 30 minutes, but you can extend this to overnight. Avoid marinating for more than 36 hours, as the yogurt may start to break down the chicken's texture.
Preheat the air fryer to 400°F. Arrange the chicken thighs in a single layer in the air fryer basket and cook for 20 to 24 minutes, flipping them halfway through to ensure even cooking. If necessary, cook in batches to avoid overcrowding.
Heat a skillet or a grill/grill pan over medium-high heat and lightly coat it with cooking spray. Sear the chicken for approximately 15 to 20 minutes, turning it halfway through the cooking time for even browning.
Once cooked, remove the chicken and place it on a cutting board to rest before slicing. Assemble your pita sandwiches or serve the sliced chicken atop a salad, garnished with ½ cup of shredded lettuce, sliced onion, a tomato slice, and tzatziki sauce if you wish.
