Rinse and pat dry the chicken cutlets, then season them with salt and pepper to taste.
Set your oven to preheat at 450°F. Apply a light coating of non-stick spray to a baking dish.
In one bowl, mix together the breadcrumbs and 2 tablespoons of grated cheese. In a separate bowl, pour in 1/4 cup of egg beaters or egg whites.
Finely shred or chop 1.5 ounces of mozzarella cheese and combine it with the remaining grated cheese, well-drained spinach (make sure to squeeze out excess moisture), 2 tablespoons of egg beaters, and ricotta cheese.
Place the chicken cutlets on your work surface and spread 2 tablespoons of the spinach-cheese filling onto each cutlet. Roll each cutlet loosely and ensure the seam is facing down.
Coat each chicken roll in the egg mixture, followed by the breadcrumb mixture, and arrange them seam side down in the prepared baking dish (toothpicks are not necessary).
Continue this process with the rest of the chicken rolls. Once completed, give them a light spray of olive oil. Bake for 25 minutes.
Take the dish out of the oven, then generously spoon sauce over each roll and sprinkle with cheese.
Return to the oven and bake until the cheese is melted and bubbling, approximately an additional 3 minutes.
Serve the rollatini with extra sauce on the side and some grated cheese for garnish.
