Ingredients

  • 12 chicken tenders
  • olive oil spray
  • 1 1/2 cups marinara sauce
  • 1 cup shredded part-skim mozzarella
  • 1/4 cup grated Parmesan cheese
  • chopped basil leaves
  • 1 cup seasoned breadcrumbs
  • 1 large eggs
  • 1 teaspoon kosher salt

    Begin by preheating your oven to 425°F. Prepare a baking sheet by lining it with aluminum foil and applying a non-stick spray.

    Season the chicken pieces with a pinch of salt. In a shallow dish, crack and beat an egg. In another shallow dish, pour in the breadcrumbs.

    Take each piece of chicken and first coat it in the egg, then roll it in the breadcrumb mixture, ensuring to shake off any excess, and place them on the prepared baking sheet.

    Lightly mist both sides of the chicken tenders with cooking oil for an even bake.

    Bake the chicken for 18 minutes, turning them over halfway through the cooking time until they are fully cooked. Don’t worry about achieving a crispy texture, as they will be smothered in marinara later.

    Move the chicken tenders to a 9×13-inch baking dish, arranging them neatly. Pour the marinara sauce evenly over the chicken, then sprinkle the mozzarella and Parmesan cheese on top.

    Place the baking dish in the oven for 8 to 10 minutes, or until the marinara is bubbling and the cheeses have melted. Garnish with fresh basil before serving.
