My weeknights are pretty hectic and my dinners are usually quick meals I can make in under 30 minutes. This is a quick Greek inspired chicken dish and a great way to make boneless chicken thighs. I'm sure chicken breast would work well with this too. Perfect with some fresh lemon and a Greek salad on the side.

Ingredients

  • 6 skinless boneless chicken thighs
  • salt and fresh pepper
  • 1/4 cup feta cheese
  • 2 tbsp fresh chopped parsley
  • lemon juice
  • 1 clove garlic
  • 1 tsp oregano
  • 6 oz jar marinated artichoke hearts

Instructions

    In a bowl, mix the artichoke hearts along with their liquid and the chicken, allowing it to marinate for approximately 20 minutes.

    Once marinating is complete, drain off all the liquid.

    Incorporate garlic, oregano, salt, and pepper into the mixture.

    Place the chicken under the broiler on a low setting, positioned about 6 inches from the heat source, and cook for around 10 minutes or until it develops a golden brown color. Flip the chicken and continue broiling for another 8-10 minutes until it is thoroughly cooked.

    Sprinkle feta cheese over the chicken and broil for an extra minute.

    Take the chicken out of the oven and garnish with fresh parsley. If you like, drizzle with lemon juice for added flavor!
