In a large, heavy-bottomed skillet, warm the oil over medium heat. Incorporate the onions and sauté until they turn a lovely golden color, which should take around 3 minutes.
Introduce the minced ginger and stir for 1 minute before adding the garlic, cooking for an additional minute. Then, mix in the cumin, garam masala, turmeric, chili powder, and salt; stir continuously until the spices become aromatic, approximately 2 minutes.
Pour in the tomatoes and milk, allowing the mixture to simmer on low heat until the sauce reaches a thicker consistency, about 10 minutes.
To temper the yogurt: In a separate bowl, combine the yogurt with 1/2 cup of the sauce and mix thoroughly. Gradually add this mixture back into the sauce and stir well to combine.
Add the chicken pieces and let them simmer for 10 to 15 minutes, or until they are fully cooked through.
