I am a huge fan of the rice at Chipotle's. Here is my copycat version for their cilantro lime rice, it tastes just like the real thing! Of course, I used less oil. Makes a wonderful side dish for chicken, beef or pork.

Ingredients

  • 1 cup extra long grain rice or basmati rice
  • 3 tbsp fresh chopped cilantro
  • 3 tsp vegetable oil
  • 1/2 lime
  • 2 cups water
  • 1 tsp salt

Instructions

    In a sturdy small saucepan, combine the rice, water, 1 teaspoon of oil, and salt.

    Bring the mixture to a vigorous boil over high heat until most of the liquid has evaporated. When the water level just reaches the surface of the rice, reduce the heat to low and cover the pot. Let it simmer for about 20 minutes.

    Turn off the heat but leave the pot covered for an additional 5 minutes to allow the rice to finish steaming.

    In a medium-sized mixing bowl, mix together the chopped cilantro, lime juice, cooked rice, and the remaining oil. Toss until everything is well combined.
