In a food processor equipped with a metal blade, add 1/3 cup of the walnuts.
Blend the nuts until they achieve a texture similar to coarse sand. Once done, transfer them to a small bowl and set aside.
Incorporate the remaining walnuts into the food processor and blend until they are finely crushed.
To the finely ground walnuts, add the dates, pumpkin purée, cocoa powder, salt, and vanilla extract. Continue processing until all ingredients are well mixed and the texture is smooth.
With a spoon or your hands, take portions of the mixture and form them into 8 equal-sized balls, roughly the size of golf balls.
