In a blender, combine milk, 1 cup of fresh strawberries, freeze-dried strawberries, and maple syrup. Blend until the mixture is completely smooth, then pour it into a large mixing bowl. Add the chia seeds and mix thoroughly, ensuring there are no clumps of chia seeds present. Let the mixture sit for approximately 15 minutes to allow the chia seeds to swell.
Divide the remaining strawberries evenly into the base of five glass cups or 8 oz ramekins, using ¼ cup of strawberries for each. On top of the strawberries, pour about 3/4 cup of the prepared chia pudding. Place the cups in the refrigerator for a minimum of 1 hour, or overnight if preferred. Proceed to the next step only when the pudding has set firmly.
When the chia pudding is ready, melt the chocolate along with the coconut oil in the microwave, heating in 30-second intervals (this should take about 1 ½ minutes total), stirring in between. Alternatively, you can use a double boiler for this process. Once melted, drizzle approximately 1 tablespoon of the chocolate mixture over each serving, gently spreading it across the top, and finish with additional strawberries as a garnish.
Allow the chocolate layer to set in the refrigerator for 1 to 2 hours before serving.
