Use a meat mallet to gently pound the thicker part of the chicken breast until it is level with the thinner side for even cooking.
In a large glass or ceramic bowl with a lid, or a gallon-sized freezer bag, mix together the juice of 1 lime, the zest of the lime, olive oil, 1/4 cup of finely chopped cilantro, minced garlic, and salt.
Thoroughly coat the chicken on both sides with the marinade and refrigerate for a minimum of 1 hour, or up to overnight for enhanced flavor, turning the chicken halfway through the marinating process.
When you’re ready to cook, preheat a grill or grill pan with a drizzle of oil over medium to medium-high heat.
Cook the chicken for approximately 5 minutes on each side, or until it is nicely charred and has reached an internal temperature that indicates it is fully cooked.
Once done, transfer the chicken to a serving platter and drizzle with the leftover lime juice. Top with the remaining fresh cilantro for garnish.
For air frying, arrange the chicken in a single layer and air fry at 380 degrees Fahrenheit for 5 minutes on each side.
