Ingredients

  • 1 lb fish fillets
  • 2 jalapeño peppers
  • 2 cups diced tomatoes
  • 1/4 cup fresh cilantro
  • 3 tablespoons lime juice
  • kosher salt and pepper to taste
  • 8 white corn tortillas
  • 4 ounces 1 medium haas avocado, sliced
  • 1 cup sliced cabbage
  • lime wedges and cilantro for garnish
  • 1 small onion
  • 4 garlic cloves
  • 1 tsp olive oil

Instructions

    In a large skillet, pour in olive oil and warm it up over medium heat.

    Add the chopped onion and sauté until it becomes translucent, which should take around 4 to 5 minutes. After that, incorporate the minced garlic and continue cooking for an additional minute. Stir everything together thoroughly.

    Introduce the fish to the skillet and allow it to cook until the flesh begins to flake apart.

    Stir in the diced jalapeño peppers, chopped tomatoes, cilantro, and lime juice. Cook this mixture over medium-high heat for approximately 5 minutes, using a spoon to break apart the fish and ensure everything is well combined. Season with salt and pepper to your preference.

    At the same time, warm the tortillas in a skillet or directly over the burner flame for 1 to 2 minutes on each side until they are heated through.
