In a sturdy saucepan, blend together the egg whites, sugar, and shredded coconut. Cook over medium-low heat, stirring constantly, until the mixture becomes cohesive and uniform, which should take approximately 12-15 minutes.
Ensure that the resulting mixture is sticky and moist in texture, avoiding any dryness.
Take the saucepan off the heat and mix in the almond and vanilla extracts. Transfer the mixture to a plate and allow it to chill in the refrigerator for about 30 minutes.
Preheat your oven to 300°F.
With a tablespoon, scoop out tightly packed mounds and place them onto a baking sheet lined with a silpat or parchment paper.
Bake for 27-30 minutes, or until they achieve a golden brown color.
