Ingredients

  • 1 cup corn kernels
  • 2 tablespoons diced red onion
  • 2 teaspoons extra virgin olive oil
  • 2 tablespoon fresh lemon juice
  • 1/4 teaspoon kosher salt
  • fresh black pepper
  • 1 cup halved cherry tomatoes
  • 5 ounces diced avocado
  • 1 1/2 cup diced Persian cucumbers

Equipment Needed

  • Steamer (I use this one from OXO)

Instructions

    Cook the corn using a steamer or microwave (alternatively, you can grill or boil it) until it becomes tender, which should take around 5 minutes.

    Allow the corn to cool down before moving it to a spacious mixing bowl.

    Combine all the other ingredients in the bowl and mix well, then serve right away.
