Begin by preheating your oven to 350°F. Lightly coat a 9 x 13 inch non-stick baking pan with cooking spray.
In a spacious mixing bowl, combine the flour, baking soda, salt, and cinnamon, stirring them together until well mixed.
In a separate bowl, use a whisk to blend the sugars with the butter, egg whites, applesauce, and vanilla extract until the mixture becomes light and airy.
Gradually incorporate the dry ingredients into the wet mixture in two parts, whisking until the batter is thoroughly combined. If the batter appears more crumbly than smooth, add a tiny amount of water, just a drop at a time, until it reaches a smoother consistency (only if necessary).
Gently fold in the white chocolate chips and 1/3 cup of cranberries. Transfer the batter to the prepared baking pan, using the back of a measuring cup to spread it out evenly.
Bake for 10 to 14 minutes, or until the edges turn a light golden brown and a toothpick inserted into the center comes out clean. Avoid over-baking, as this will result in dry bars. Allow the bars to cool completely on a wire rack.
While the bars are cooling, make the frosting. In a large bowl, use an electric mixer to beat together the cream cheese, powdered sugar, and vanilla until the mixture is smooth and well combined. Spread the frosting over the cooled bars and sprinkle the remaining cranberries on top. Drizzle with the melted white chocolate.
*To melt the chocolate, place it in a microwave-safe container and heat for 15 seconds; stir. Repeat the heating for another 15 seconds and stir again until the chocolate is fully melted.
Once the chocolate has set, cut the bars into 15 large squares (5 cuts across and 3 cuts down). Then, slice each square diagonally to form triangles. Keep the bars stored in the refrigerator until you're ready to serve.
