In a spacious pot, gently heat the butter over low flame. Once melted, introduce the chopped onion and cook until it becomes translucent and tender, which should take around 2 minutes.
Chop the asparagus into halves and incorporate them into the pot along with chicken broth and black pepper according to your preference. Bring the mixture to a boil, then cover and reduce the heat to low, allowing it to simmer for approximately 20 minutes, or until the asparagus is exceptionally soft.
Once the cooking time is complete, take the pot off the heat. Stir in the sour cream and, using an immersion blender, blend the mixture until it reaches a silky consistency (or you can do this in two batches using a standard blender).
