Ingredients

  • 4 1/4 cups reduced sodium chicken broth
  • 1 clove garlic
  • 5 heaping cups broccoli florets
  • 1/2 cup 2% milk
  • 3 tablespoons reduced-fat sour cream
  • ground black pepper to taste
  • 1/2 cup sharp cheddar cheese
  • 1 celery stalk
  • 1 medium onion
  • 1 carrot

Instructions

    In a medium stock pot, combine chicken broth, diced onions, sliced carrots, minced garlic, and chopped celery. Bring this mixture to a boil, then cover and allow it to simmer for 5 minutes.

    Incorporate the broccoli, milk, and pepper, then continue cooking, covered, for an additional 10 minutes.
