Ingredients

  • 1/2 small onion
  • 2 cloves garlic
  • kosher salt and black pepper to taste
  • fresh grated parmesan cheese if desired for topping
  • 2 tbsp reduced fat sour cream
  • 3 medium zucchini
  • 32 oz reduced sodium Swanson chicken broth

Instructions

    In a spacious pot, mix together chicken broth, diced onion, minced garlic, and chopped zucchini. Place it over medium heat and allow the mixture to come to a boil.

    Once boiling, reduce the heat, cover the pot, and let it simmer until the vegetables are tender, which should take approximately 20 minutes.

    After simmering, remove the pot from the heat source and use an immersion blender to purée the contents. Incorporate the sour cream and blend again until the mixture is completely smooth.
