Ingredients

  • 6 cups 1 large head cauliflower, cut up into florets
  • 2 chopped scallions
  • 1/3 cup fat free milk
  • kosher salt and pepper to taste
  • 4 teaspoons unsalted butter
  • 3 cups chopped kale
  • 4 cloves crushed garlic

Instructions

    Prepare the cauliflower: Place the cauliflower florets into a medium-sized saucepan and pour in enough cold water to cover them by at least one inch. Sprinkle in some salt, then bring the water to a rolling boil.

    Cook until tender: Once boiling, cover the pot and let the cauliflower simmer until it is easily pierced with a fork, which should take about 6 to 8 minutes. Afterward, drain the cauliflower in a colander, keeping some of the cooking liquid aside if necessary.

    Sauté the aromatics: In the same saucepan, heat 1 teaspoon of butter over medium-high heat. Add the minced garlic and sliced scallions, cooking for approximately 30 seconds. Then, stir in the kale along with 1/4 teaspoon of salt. Cover the pot and allow it to cook until the kale has wilted, which will take around 6 to 7 minutes.

    Blend the cauliflower: In a blender, combine the cooked cauliflower with a splash of milk and blend until smooth. Pour this mixture back into the pot with the sautéed greens, adding 2 teaspoons of butter, 1/4 teaspoon of salt, and a dash of pepper. Keep the mixture warm over low heat.

    Serve the dish: Spoon the creamy cauliflower mash into a serving bowl and finish by melting the remaining teaspoon of butter on top.
