In a medium-sized mixing bowl, combine the beans with 2 teaspoons of olive oil, 1/4 teaspoon of kosher salt, 1/4 teaspoon of onion powder, and smoked paprika. Toss until evenly coated.
Place the seasoned beans into the air fryer basket and set the temperature to 380°F. Cook for 15 minutes, shaking the basket every 5 minutes to ensure even cooking. Once finished, sprinkle with sea salt to taste.
While the beans are cooking, prepare the dipping sauce. In a blender, mix together 1/3 cup of the reserved bean liquid, parsley, mint, lemon zest, lemon juice, the remaining 1 tablespoon of olive oil, 1/4 teaspoon of onion powder, and 1/4 teaspoon of salt.
Blend the mixture until it reaches a smooth consistency. Pour into a small bowl and garnish with chili flakes.
Serve the crispy beans alongside the vibrant green dipping sauce.
For oven baking, preheat your oven to 400°F. Ensure the beans are thoroughly dried (letting them sit on the counter for a few hours before baking can help).
Spread the beans out in a single layer on a parchment-lined baking sheet (you may need multiple sheets or to bake in batches), and roast for 20 to 28 minutes, stirring halfway through, or until they are golden and crunchy.
