Ingredients

  • 15 oz can butter beans
  • 1/4 teaspoon smoked paprika
  • coarse sea salt
  • 2 cups parsley
  • 1/2 cup mint
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 1/4 teaspoon red chili flake
  • 1 tablespoon extra olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 2 teaspoons olive oil

    Pat the beans thoroughly with paper towels to remove all moisture.

    In a medium-sized mixing bowl, combine the beans with 2 teaspoons of olive oil, 1/4 teaspoon of kosher salt, 1/4 teaspoon of onion powder, and smoked paprika. Toss until evenly coated.

    Place the seasoned beans into the air fryer basket and set the temperature to 380°F. Cook for 15 minutes, shaking the basket every 5 minutes to ensure even cooking. Once finished, sprinkle with sea salt to taste.

    While the beans are cooking, prepare the dipping sauce. In a blender, mix together 1/3 cup of the reserved bean liquid, parsley, mint, lemon zest, lemon juice, the remaining 1 tablespoon of olive oil, 1/4 teaspoon of onion powder, and 1/4 teaspoon of salt.

    Blend the mixture until it reaches a smooth consistency. Pour into a small bowl and garnish with chili flakes.

Notes & Tips

  • Canned gigante beans can be used in place of canned butter beans and get the same treatment. You may need to add a minute or 2 more. Any other bean will get too small and not be “dippable”.
