Ingredients

  • 8 chicken thighs
  • 1/2 large onion
  • 1 tsp dried oregano
  • 1 bay leaf
  • salt and fresh pepper to taste
  • 1/4 cup fresh herbs such as basil or parsley for topping
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 28 oz can crushed tomatoes

Instructions

    Season the chicken pieces generously with salt and black pepper, then transfer them into the slow cooker.

    Layer the tomatoes over the chicken, followed by the onions and bell peppers. Sprinkle in the oregano, add the bay leaf, and season with additional salt and pepper. Give everything a brief stir before securing the lid.

    Program the crock pot to cook on LOW for 8 hours or on HIGH for 4 hours.

    Once the cooking time is complete, lift the lid and switch the crock pot to HIGH for an additional hour to allow the sauce to thicken.

    In a large skillet set over medium-high heat, lightly mist with oil (I prefer using my Misto) and sear the chicken on both sides for a few minutes, seasoning with salt and pepper. Then, transfer the browned chicken back to the slow cooker.

    In the same skillet, add a bit more oil and toss in the onions and bell peppers. Sauté until the vegetables release their juices and turn golden brown, which should take a few minutes. Add this mixture to the slow cooker. Pour the tomatoes over the chicken and vegetables, then sprinkle in oregano, bay leaf, salt, and pepper. Stir quickly to combine and cover again.

    Set the crock pot to cook on LOW for 8 hours or HIGH for 4 hours. Afterward, remove the bay leaf, adjust the seasoning with salt and pepper to taste, and enjoy your meal!
