Begin by placing the chicken pieces into the slow cooker, then generously season them with black pepper. In a separate medium-sized bowl, whisk together the soy sauce, honey, tomato paste, vinegar, minced garlic, grated ginger, sesame oil, 1 tablespoon of water, and sriracha. Once mixed, pour this flavorful mixture over the chicken and set the slow cooker to LOW for a cooking time of 3 to 4 hours.
After the cooking time is complete, carefully take the chicken out of the slow cooker, ensuring to leave the sauce behind. Use two forks to shred the chicken into bite-sized pieces and set it aside for later.
In a small bowl, mix the cornstarch with the remaining ¼ cup of water until fully dissolved. Add this slurry to the sauce in the slow cooker and stir well to combine.
