Ingredients

  • 2 lbs boneless skinless chicken thighs
  • black pepper
  • 3 tablespoons rice wine vinegar
  • 6 cloves garlic
  • 1 ½ teaspoons grated ginger
  • 2 teaspoons sesame oil
  • 5 tablespoons water
  • teaspoons sriracha
  • tablespoons cornstarch
  • 1 tablespoon sesame seeds
  • 4 medium scallions
  • 1 ½ tablespoons tomato paste
  • ½ cup low-sodium soy sauce
  • 5 tablespoons honey

Equipment Needed

  • Slow Cooker

Instructions

  1. 1

Begin by placing the chicken pieces into the slow cooker, then generously season them with black pepper. In a separate medium-sized bowl, whisk together the soy sauce, honey, tomato paste, vinegar, minced garlic, grated ginger, sesame oil, 1 tablespoon of water, and sriracha. Once mixed, pour this flavorful mixture over the chicken and set the slow cooker to LOW for a cooking time of 3 to 4 hours.

  2. 2

After the cooking time is complete, carefully take the chicken out of the slow cooker, ensuring to leave the sauce behind. Use two forks to shred the chicken into bite-sized pieces and set it aside for later.

  3. 3

In a small bowl, mix the cornstarch with the remaining ¼ cup of water until fully dissolved. Add this slurry to the sauce in the slow cooker and stir well to combine. Cover the slow cooker and switch it to HIGH, allowing it to cook for an additional 15 to 20 minutes, or until the sauce has thickened slightly. Once thickened, return the shredded chicken to the slow cooker and stir until well coated.

  4. 4

To serve, spoon the chicken and sauce over a bed of rice, and finish by sprinkling sesame seeds and chopped scallions on top as a garnish.

Notes & Tips

  • If you won’t be home all day, and your slow cooker doesn’t go to warm after it’s done, it should be fine leaving it on low 6 hours.
