In a spacious skillet, cook the sausage over medium-high heat, using a wooden spoon to crumble any large chunks as it browns.
Once the sausage has achieved a nice brown color, if necessary, drain any excess fat and transfer the meat into the slow cooker.
Use a paper towel to clean the skillet and increase the heat to high; when it’s sufficiently hot, pour in the oil.
Toss in the garlic and sauté until it turns golden, ensuring it doesn’t burn; then add the tomatoes and the sautéed garlic to the slow cooker, along with freshly cracked pepper. Cover and let it simmer on low for 6-8 hours.
If desired, employ an immersion blender to pulse the sauce for 2-3 seconds, breaking the sausage into finer pieces for better integration with the sauce.
