Ingredients

  • 1-1/2 lbs boneless skinless chicken thighs
  • 1 cup jarred salsa
  • 3/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon adobo seasoning

Equipment Needed

  • Slow Cooker

Instructions

  1. 1

Coat the chicken with adobo seasoning (or taco spice blend), then transfer it to the slow cooker. Add salsa, garlic powder, and 1/2 teaspoon of cumin on top.

  2. 2

Secure the lid and cook on the LOW setting for 4 hours. After cooking time is complete, take out the chicken and place it on a large dish; shred it using two forks. Strain the cooking liquid into a bowl and set aside, then return the shredded chicken to the slow cooker, adjusting the salt to your preference and incorporating the remaining 1/4 teaspoon of cumin.

  3. 3

Reintroduce 3/4 cup of the reserved liquid back into the slow cooker and cover until you’re ready to serve.

  4. 4

This recipe yields approximately 2 3/4 cups of chicken.
